A tale of two pizzas: The bizarre story of Canada's mozzarella cheese prices

Do you ever wonder why extra cheese counts as two toppings at your favourite pizzeria? Believe it or not, it's because fresh pizza makers in Canada have to pay up to 30 per cent more than frozen pizza makers for the exact same cheese!

It all stems from the fact that Canada's cheese prices are uncompetitive with U.S. cheese prices. To help Canada's frozen pizza makers compete with frozen pizzas imported from the U.S., the Canadian Dairy Commission allows them to buy mozzarella cheese for a deep discount to bring the price down to a more realistic level. But pizzerias get no discount. They are forced to pay among the world's highest price for mozzarella cheese, or "white gold" as it's known in the industry.

So far, the CDC has refused to even the playing field. They argue that fresh pizza makers aren't in competition with frozen pizzas - but as any advertising campaign for frozen pizza will tell you, they compete head on.
